Ingredients:

2 pounds Permaculture Pastures grass-fed stew meat

Salt and pepper

3 tablespoons vegetable oil

1 large onion, diced

4 garlic cloves, minced

1 tablespoon grated fresh ginger

3 tablespoons curry powder (or your favorite curry blend)

1 teaspoon ground cumin

1 teaspoon turmeric

1 (14-ounce) can full-fat coconut milk

1½ cups beef or chicken broth

1 (14-ounce) can diced tomatoes

2 medium potatoes, peeled and cubed

2 medium carrots, sliced

1 tablespoon fresh lime juice

Fresh cilantro, for garnish


Instructions:

1. Sear the Stew Meat:

Pat the grass-fed stew meat dry with paper towels and season generously with salt and pepper. Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat. Add the stew meat in batches, browning on all sides (about 6–8 minutes per batch). Transfer the meat to a plate and set aside.

2. Build the Flavor Base:

Reduce the heat to medium and add the remaining oil to the pot. Stir in the onion, cooking until softened and golden, about 5 minutes. Add the garlic and ginger, cooking for 1–2 minutes until fragrant. Sprinkle in the curry powder, cumin, and turmeric, stirring to coat the onions in those warm, aromatic spices.

3. Simmer the Curry:

Pour in the coconut milk, broth, and diced tomatoes, stirring to combine. Return the browned stew meat to the pot along with its juices. Bring the mixture to a gentle simmer.

4. Add the Vegetables:

Stir in the potatoes and carrots. Cover the pot and let the curry simmer on low heat for 1½ to 2 hours, or until the stew meat is melt-in-your-mouth tender and the sauce has thickened beautifully.

5. Finish with Lime & Garnish:

Off the heat, stir in the fresh lime juice to brighten the flavors. Ladle the curry into bowls, garnish with fresh cilantro, and serve with rice or warm naan bread.
