Ingredients:

2–3 pounds Permaculture Pastures beef tongue or grass-fed roast

Salt and pepper

1 tablespoon olive oil

1 large onion, diced

4 garlic cloves, minced

1 (16-ounce) jar of roasted green chiles (mild or spicy, your choice)

1 (14-ounce) can diced tomatoes

1½ cups beef broth

1 teaspoon ground cumin

1 teaspoon oregano

½ teaspoon smoked paprika

½ teaspoon chili powder

Juice of 1 lime

Fresh cilantro, for garnish


Instructions:

1. Prep the Beef:

If using beef tongue, rinse it well under cold water. Pat it dry and season generously with salt and pepper. If using a roast, pat it dry and season the same way.

2. Sear the Meat:

Heat olive oil in a skillet over medium-high heat. Sear the beef tongue or roast on all sides until golden brown (about 2–3 minutes per side). Transfer it to your slow cooker.

3. Build the Flavor Base:

In the same skillet, sauté the onion until softened, about 5 minutes. Add the garlic and cook for another minute. Transfer the mixture to the slow cooker.

4. Add the Good Stuff:

Pour in the green chiles, diced tomatoes, and beef broth. Sprinkle in the cumin, oregano, smoked paprika, and chili powder. Stir everything together, ensuring the beef is nestled into the liquid.
