Howdy, friends! If you’re looking for a dish that’s hearty, flavorful, and packed with nutrition, then you’ve come to the right place. Today, we’re diving into the delicious world of Taco Soup—a one-pot wonder that’s not only easy to make but also secretly super nutritious. The secret ingredient? Our grass-fed primal ground beef from Permaculture Pastures, right here in Sunset, Texas.

Now, I know what you’re thinking: “Primal ground beef? What’s that?” Well, let me tell you—it’s a game-changer. Primal ground beef is a blend of high-quality grass-fed beef and nutrient-dense organ meats like liver, heart, and kidney. It’s an old-fashioned way of eating that’s making a comeback for good reason. Let me tell you why.

Why Primal Ground Beef?

Organ meats are some of the most nutrient-dense foods on the planet, and incorporating them into your diet is a surefire way to boost your health. Here’s what you get with every bite of primal ground beef:

Iron & Zinc: Supports energy levels and strengthens your immune system.

B Vitamins: Promotes brain health and combats fatigue.

Vitamin A: Found in liver, it’s essential for eye health and glowing skin.

Collagen: From connective tissues, it helps your joints and skin stay youthful.

Grass-fed beef is even better—it’s leaner, higher in Omega-3 fatty acids, and loaded with antioxidants like Vitamin E.

But let’s be real: not everyone loves the taste of organ meats. That’s where this recipe comes in. Taco soup is the perfect way to enjoy all those nutrients without even realizing they’re there. The bold flavors of cumin, chili powder, and tomatoes blend beautifully with the primal ground beef, making it a family-friendly meal that everyone will love.

Let’s Get Cooking!

Ingredients:

1 pound Permaculture Pastures primal ground beef

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning (or homemade blend: chili powder, cumin, paprika, oregano, and a pinch of cayenne)

1 (15-ounce) can black beans, drained and rinsed

1 (15-ounce) can kidney beans, drained and rinsed

1 (14.5-ounce) can diced tomatoes with green chiles

1 cup frozen corn

3 cups beef or chicken broth

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

Instructions:

1. Sauté the Aromatics:

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic, cooking until softened and fragrant, about 3 minutes.

2. Cook the Beef:

Add the primal ground beef to the pot, breaking it up with a spoon as it browns. Sprinkle in the taco seasoning, stirring to coat the meat evenly.

3. Add the Good Stuff:

Stir in the beans, diced tomatoes, corn, and broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, allowing all the flavors to meld together.

4. Season to Taste:

Give the soup a taste and add salt and pepper as needed.

5. Serve & Garnish:

Ladle the soup into bowls and let your family pile on their favorite toppings—cheese, sour cream, a squeeze of lime, or a handful of crunchy tortilla chips.
