1 cup full-fat coconut yogurt (or any dairy-free yogurt of your choice)

1 cucumber, finely grated and excess water squeezed out

1 tablespoon fresh dill, chopped

1 tablespoon fresh lemon juice

1 clove garlic, minced

Salt and pepper to taste


For the Gyro Assembly:

Large lettuce leaves (such as Romaine or Butterhead) for wraps or cauliflower rice as a base

Sliced tomatoes

Sliced red onion

Fresh cucumber slices

Fresh parsley or cilantro for garnish


Instructions:

1. Cook the Ground Beef:

In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until soft, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
