4–5 pounds Permaculture Pastures grass-fed soup bones (a mix of marrow and joint bones works best)

2 tablespoons apple cider vinegar

2 large carrots, roughly chopped

2 celery stalks, roughly chopped

1 large onion, quartered

4 garlic cloves, smashed

1 teaspoon whole black peppercorns

2 bay leaves

3 sprigs fresh thyme (or 1 teaspoon dried)

1 handful fresh parsley

1 gallon water (enough to cover the bones)

Salt to taste (added after cooking)


Instructions

1. Roast the Bones:

Preheat your oven to 400°F. Spread the soup bones on a baking sheet and roast for 25–30 minutes, until they’re golden brown. This step deepens the flavor of your broth.

2. Prep the Pot:

Transfer the roasted bones to a large stockpot or slow cooker. Add the apple cider vinegar and let it sit for 30 minutes. This step helps pull out the minerals from the bones.

3. Add Veggies & Herbs:

Toss in the carrots, celery, onion, garlic, peppercorns, bay leaves, thyme, and parsley. Pour in enough water to completely cover the bones and veggies.

4. Simmer Low & Slow:

Bring the pot to a gentle boil, then reduce the heat to a low simmer. Skim off any foam that rises to the top during the first hour. Let the broth simmer for at least 12 hours (and up to 24 hours) for maximum flavor and nutrients. If using a slow cooker, set it to low and let it go overnight.

5. Strain & Store:

Once the broth is rich and golden, strain it through a fine-mesh sieve or cheesecloth. Discard the bones and vegetables (they’ve done their job!). Let the broth cool slightly before seasoning with salt.

6. Store Your Liquid Gold:

Pour the broth into glass jars or freezer-safe containers. It’ll keep in the fridge for up to a week or in the freezer for several months.
