Grass-Fed Brisket Hash Recipe


Ingredients:

1 lb grass-fed brisket, cooked and cubed

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium onion, diced

2 tablespoons olive oil

Salt and black pepper to taste

1 teaspoon smoked paprika (optional)

Fresh parsley, chopped (for garnish)


For the Avocado Dressing:

1 ripe avocado

1/4 cup Greek yogurt (or sour cream for a richer flavor)

1 tablespoon lime juice

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/4 teaspoon salt

A pinch of cayenne pepper (optional for a little heat)

Water, as needed to thin the dressing


Optional Garnish:

2 fried eggs (one for each serving)


Instructions:

1. Prepare the Brisket:

If you don’t already have cooked brisket on hand, you can easily cook a brisket in the oven or slow cooker until tender, then cube it into bite-sized pieces. (For a shortcut, leftovers from a recent brisket meal will work perfectly!)

2. Cook the Sweet Potatoes:

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sweet potatoes and cook, stirring occasionally, for about 10-12 minutes or until they begin to soften and caramelize. Season with salt, pepper, and smoked paprika, if using. Remove the sweet potatoes from the skillet and set them aside.

3. Cook the Vegetables:

In the same skillet, add the remaining tablespoon of olive oil. Add the diced bell peppers and onions, and sauté for 5-7 minutes until they soften and begin to brown. Season with a little salt and pepper.

4. Combine the Hash:

Add the cubed brisket to the skillet and stir everything together. Let it cook for an additional 5 minutes, allowing the flavors to meld. Add the cooked sweet potatoes back into the skillet and stir again until everything is well combined and heated through.
